This was done in about half an hour yesterday using whatever we had left in terms of food...

Vaguely Paella-esque Thing

Ingredients (serves 2)
2x chicken breasts
3tbsp tomato puree
1/4 pt chicken stock
2tbsp creme fraiche
1x packet of Uncle Ben's 'Mexican Style' microwaveable rice (so, not technically a completely fresh recipe, but whatever)...
1x small onion
Herbs (whatever you like)

Method
Dice chicken and chop onion, and cook in a frying pan using a little oil.

Whilst chicken is cooking, make the chicken stock, then add creme fraiche and tomato puree and whisk until smooth. It should be the consistency of thick gravy.

Add rice to pan, then pour over the stock mixture. Throw in some herbs - I used sage, parsley, plus some paprika and mild chilli powder - and stir everything together, then simmer for 10 minutes.

Serve.

Considering it was basically a 'what-happens-if-I-do-this' recipe, it was surprisingly nice...

If you make the rice from scratch, it basically has red peppers, beans and some manner of spices in it. Rice is one of the other things I simply cannot cook, unless it's in risotto, so for the moment I rely on the microwaveable stuff.

we have always (well since i was small at least) cooked our rice and pasta in the microwave. one mug full does two people rather well...and double for the water(pre boiled in the kettle), cover, microwave for 10 mins, leave to stand for 5
perfect rice...:-)

pasta much the same only cover with water as you would in a pan...
