Last night I made possibly the healthiest meal in a while, though that was rather negated by the sheer amount of it.
Pesto Chicken Pasta
Not the most adventurous of titles, but there's not much else you can do with it...
Ingredients (serves 2 starving people)
400g chicken (I used goujons, but diced or just chicken breasts would do)
1 small pot low-fat natural yoghurt
1/2 jar ready-made pesto (mine was from Lidl)
2 servings pasta
olive oil
water
parmesan
Method
1. Slice chicken into strips, if required.
2. Pan-fry the chicken in a little oil, turning occasionally.
3. Whilst frying the chicken, add a pinch of salt and a drizzle of olive oil to a medium-sized saucepan, half-fill with water and bring to the boil.
4. Add pasta to the pan and cook for the required time (usually 5-10 minutes depending on the type).
5. Pour yoghurt into a second saucepan and add a couple of large teaspoons of pesto. Mix together and put onto a low heat to warm through. Stir occasionally to ensure the yoghurt and oil do not separate.
6. Put cooked chicken onto the plate and pour half of the pesto/yoghurt mixture over it.
7. Drain cooked pasta and return to pan, then pour the other half of the sauce over it. Mix well and warm through for a few seconds, then serve with the chicken.
8. Sprinkle with parmesan if required.
I also did this with home-made garlic bread (yes, I am a kitchen goddess) and it was lovely. There was rather a lot of it, so I had the rest for my lunch today... The only bad thing was that the yoghurt overpowered the pesto flavour a little bit, so I might try it with double cream next time (just to make it slightly less healthy...)
Tonight I'm leaving work at about 5.30 to go to a rehearsal for the City of Birmingham Choir (if I can find the bloody place), in the hope of auditioning next week. Christmas just isn't Christmas without a good sing-song, so I'm biting the bullet and trying to join up. Here's hoping my soprano hasn't withered and died. Wish me luck!

At the very least, we'll have cable television (more channels yay!) and a landline, and will be setting up a network once I've dug my computer out from under the boxes... I keep meaning to move stuff around at the weekend but it's hampered by Paul being hungover or my back killing me for no reason... But yes, thank you anyway.
